The Snow Queen’s Peppermint Cookies

So the weather is beyond beautiful. Crisp, clear blue skies and the scent of pine in the air. Ok, that might be my imagination, but it fits in my scenario.

I love the winter, it’s my absolute favorite season and if I could live in an even colder place I would, but for now I have to settle for South Florida.

Well, in the spirit of the cool weather, I made these cookies that would be perfect for the main character of one of my favorite fairy tales, The Snow Queen. The recipe, as always, is at the bottom. This is the old book I got it out of:

Mix the butter and sugar. Add the egg, peppermint extract and milk.

Sift the flour, baking powder and salt. Add to the butter mixture and stick it in the fridge for about an hour so it is can be rolled out.

While I was working away, I guess the Vinicius got hungry because I started hearing a munching sound.

Would you like some more food?

Roll the dough out and use whatever cookie cutter you like. I didn’t have any winter-themed ones so I did boring round ones, oh well. Put on a prepared pan and bake.

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon¬†peppermint extract

  1. Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
  2. In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.
  3. Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.
