Devil’s Chocolate Cake

This recipe comes from that really used, really, dirty, really good, Spanish cookbook that I periodically pull out, dragging tape and pages that have ripped from the binding. This recipe is tried and true so use without hesitation.

Beat sugar, butter, then add the eggs one at a time, beating after each.

Mix the cocoa, water (I used coffee), vanilla extract.

In another bowl, sift the flour, baking powder, salt. Add alterating with the egg mix to the cocoa mixture. And bake.

Ingredients

½ cup butter

1 ¼ cup sugar

2 eggs

½ cup cocoa

½ tsp. vanilla extract

1 cup water (or coffee)

2 cups flour

¾ tsp. baking powder

¾ tsp. salt

 Mix butter and sugar, stir well. Add eggs, one at a time. In another bowl mix the cocoa with the water and the vanilla extract, stir well. In yet another bowl, sift the flour, salt, baking powder. Alternate with the egg mixture and the flour, mixing into the cocoa mixture.

Bake at 350 F. for 35 minutes.
